I love chutney. Whether it is a mango chutney to serve with a hot curry or tomato chutney added to spruce up a sandwich I just love it. And one of my favourites is onion chutney. I have made pan fried sandwiches with onion chutney before but this time was by far the best. I played around with how I cooked the bacon and it added so much to it. This is in no way was the healthiest sandwich I have ever served, but each bite was just bursting with flavour. So much so that all you can tell yourself is “Life is too short to not enjoy this sandwich at least once”. Should I admit that I made this twice already?
Pan Fried Bacon, Camembert and Onion Chutney Sandwich
Thick sliced white loaf (2 per sandwich)
Camembert (about 85g/3oz per sandwich)
Bacon (1-2 slices per sandwich)
For me lunch is sort of an odd meal. It is often the one that gets skipped, either because I don’t have enough time to put it together or I just the lack of inspiration to know what to eat. I love sandwiches but who wants to eat a sandwich every day? I for one love variety. So I am trying to challenge myself to be more disciplined about my lunches. Every night I prepare a packed lunch for my husband. So I have decided that I need to start preparing both of our lunches this way, that way I have no excuses to eat a healthy lunch because it is already prepared. But like I said before, while I do love sandwiches, I get bored and crave more options. So I came up with a quick burrito filler that is good hot or cold. And to make it even better, it is a much healthier burrito option. You can have fun with a lot of different fillings like this, just prepare it the night before and roll it up in a tortilla for a tasty, different lunch. This kept well for three days in the fridge so it was a great lunch option for both my husband and I for the week.
I have to confess to not fully embracing a lot of Southern (American) food while I was living there. A lot of the dishes just really didn’t excite me, but there were a few that I did fall in love and I have had fun introducing my family in England to them. This dish was yet again a huge success, and it is extremely easy to do and perfect for when you want to have that BBQ taste and the weather is just not co-operating.
I loving taking old standard dishes and giving them a new twist, for me it is the best of both worlds. I can have an old childhood favorite dish with a more sophisticated flavor, a total win win. Today still focusing on lunch ideas I decided to feature one of my twists on grilled cheese. Grilled cheese has always been one of my favorite comfort foods. A few years ago I started trying out different ways that I could turn an old childhood favorite into a dish that I would want to show off to guests. I have come up with a few versions but this by far is my favorite.
For me there is nothing more dull for lunch then a really boring sandwich. The thing is that I do love sandwiches it is just more often then not it can be a very dully prepared item. It doesn’t have to be that way! Challenging yourself to come up with more exciting sandwiches not only makes your taste buds sing but it can be economical because you are less tempted to go out and spend money on lunch when your own homemade lunch is something you are actually looking forward to eating. So for fun I have challenged myself to come up with delicious and easy sandwich recipes. I am ending this week with my first recipe as I prepare for my lunch focused blog week next week. The challenge being to add some excitement and flavor to what can often be a rather simple meal.
