So this year has not only been busy learning the ropes with two kids but Chris and I have also challenged each other to lose weight and get healthy again. For us squeezing in a workout has been a real struggle with the new busy life. I know, I know everyone has that excuse and if we really wanted to we could. But some how we just can’t figure it in with baby and toddler. I am hoping as spring comes and it gets lighter earlier and later we can start up our family evening walks again. And hubby has said he wants to start running again in the morning. My biggest thing is baby is teething and very clingy and refuses to even consider bottles so am limited to putting her in a carrier and going for a long walk, which I am trying to do as often as possible. So rather then focus on what we couldn’t do we have focused on what we could. We have started eating a lot healthier and eliminating sugar for a month. Portion control and healthier eating has helped us both shed 10 lbs and still counting. We both are feeling so much better about ourselves and shedding the weight is helping us more importantly with our energy levels, which with a young baby still up a lot in the night and a toddler dealing with nightmares is even more important.
This recipe is one that I had been curious to try for ages but hadn’t attempted because cauliflower isn’t a big favourite in this house. And while it did still have that cauliflower taste that hubby wasn’t huge on it was good enough that everyone enjoyed dinner. If you are looking for a no-carb dinner solution or want pizza that is gluten-free without dealing with gluten-free bread this is a great dinner solution.
1 head cauliflower 7 – 8″ wide
1 egg, large
50g (1/2 c.) Parmesan
55g (1/2 c.) Mozzarella cheese, grated
1 tsp basil seasoning
1 tsp garlic powder
1/8 tsp salt

Today Sunday Supper is honouring the Fathers in our lives with a fantastic menu of men approved dishes. I am lucky in that my husband is more adventurous with food then I am but when I heard this was the theme I thought this would be a perfect time to share my attempt of Chicago-style pizza.
Chris is such an amazing dad who blows me away every day with his love and patience for his daughter. We just recently found out that our new bundle of joy coming is a girl which only out numbers Chris even more. Chris’ excitement when the sonographer said we are expecting another girl brought such joy to my heart. He is a daddy who loves his girls and they love him. I hope he feels honoured and appreciated every day but especially on this day. Love you honey.
Now I have only visited Chicago a few times so I can’t consider myself an expert but both hubby and I agreed this was the best Chicago pizza we have had in a while. I can’t wait until we have an excuse to make it again.
460g (3 1/4 c.) plain flour
80g (1/2 c.) yellow cornmeal
1 1/2 tsp table salt
2 tsp sugar
2 1/4 tsp instant or rapid-rise yeast
295mL (1 1/4 c.) water, room temperature
3 Tbsp unsalted butter, melted, plus 4 tablespoons, softened
1 tsp plus 4 Tbsp olive oil
2 Tbsp unsalted butter
1 medium onion, finely chopped
1/4 tsp dried oregano
3 garlic cloves, minced or pressed through garlic press
400g (28-oz) tin crushed tomatoes
1/4 tsp sugar
2 Tbsp coarsely chopped fresh basil leaves

500g (1 lb) whole-milk or part-skim mozzarella cheese, shredded (about 4 cups)

It doesn’t matter how many times I see images from a disaster I am shocked every time. I just can never get use to the immense devastation that is left behind after disasters both man-made and nature. I hope I never lose that, I hope that there never comes a time that I look at an image of what use to be an entire row of houses now left in ruins and thing, ‘Oh well it happens.’ And then move on.
If that ever happens then I know that I have gotten to a dangerous place on complacency that I never want to be in. I know we are bombarded with these sad images all the time, and it can be so easy to just flip the channel or walk away. But if we do that then we are walking away from ourselves. Because every one of those people could be us one day, disaster isn’t prejudiced it could happen to any one of us. So that is why this week Sunday Supper is taking some time out of our day to ask you to stop and look at the images and do something about it. When hurricane Sandy hit the East Coast of the USA it left a wave of devastation unmatched in that area. Many people have lost so much and sadly too many lost the ones they loved. But it is at times like this that sometimes we can be reminded about what is amazing about the human spirit. When people join together to help out their neighbours or even complete strangers. Sunday Supper decided to share with you two organizations that we would like you to consider sending some support to and I am SO proud to say that the organization my parents work for was one of them.
My parents have worked with Hope Force ever since Hurricane Katrina devastated the Gulf Coast seven years ago. This organization not only has such an amazing heart for the people they work with they are also very experienced and skilled in this kind of disaster recovery. But unlike some of the big organizations they don’t have the financial backing to do as much as they would like and rely 100% on donations. They need our support in order to touch the lives of those effected by this storm. Both Hope Force and Sandy Relief Fund are actively working in the communities of New Jersey and I would ask you to consider blessing them with much needed funds so that they can continue to work in these communities.

Spaghetti Pizza Bake
340g (12 oz.) dry spaghetti
1 tsp. salt
130g (4.5 oz.) pepperoni*, sliced (about 30 slices)
1 (26 oz.) jar basil & tomato pasta sauce (or your favourite)
56g (1/4 c.) grated Parmesan cheese
226g (8 oz. ) mozzarella
Handful of fresh basil
*chorizo was more readily available to me when I went shopping so I substituted it this time.
I am back, after a crazy week of moving things are finally starting to settle back down. Even though I haven’t made it to my final moving destination. I get to have a nice quiet two week period at my parents home, spoiling them with my cooking as I work at getting caught back up on here. For my first article back I wanted to about convenience foods. At one time or another we have all used them. For those crazy days when you just don’t have the time to cook something for your family it is so much easier use them. But if we are truly trying to be economical and health contentious it can be a bit of a pit fall. So I have worked at trying to find solutions for my life that give me the convenience without making sacrifices in other areas.
So pizza is often a staple in homes and it is the most common dish to be a convenience item. We either call in a delivery or buy a frozen pizza. But when it comes to cost and nutrition these are often not the best choices. That $10 pizza from pizza hut might sounds great but have you ever looked at the nutrition labels of their pizzas? For me personally I want my family to be able to enjoy things like pizza without feeling like I am giving them something with little to no nutritional value. Remember a healthy adult that doesn’t have issues with blood pressure or diabetes should only consume around 2,300 mg of sodium a day. And one slice of Pizza Hut Cheese Pizza contains 520mg of sodium, and who here can honestly say they only eat one slice. It is important to be aware of what you and your family are eating. The same goes for those frozen pizzas. So while you might still be tempted to buy that delivery pizza on those crazy days you can at least have an alternative option that if you plan ahead on a slow day will give you the same quick convenience options without the added calories concerns.

Dealing with the Texas summer can be a frustrating battle in many ways but the one that has been effecting me the most lately is our food budget. We live in an old house that is very poorly insulated so my air conditioning unit can’t keep the house below 83 during the day and turning our gas stove has just become not even an option. So we have been eating out more often then I can remember us ever doing. So I have had to get creative. Our charcoal grill has become my kitchen and I have tried to find unique ways to use it.
So I had this idea of making a pizza on the grill, on first thought it seemed rather original but after a quick browse on the internet I found that not to be so. But that is the beauty of the internet we read about other people’s experiences and we try and take from it and learn. So I set about creating my grilled pizza.
The dough: Well for me that was the easy part because I had a favorite whole wheat pizza dough recipe from Beth Hensperger’s book The Bread Lover’s Bread Machine Cookbook. I altered the recipe to accommodate those without a bread machine.
