This Sunday is Mother’s Day in the UK. I am very excited about this Mother’s Day because it is my first one I am not cooking. Okay I know I have only had two years as a mother but hey a night that I get taken out to a restaurant of my choice and get to feel special is something I am excited about. Becoming a mum has made me realize that days like Mother’s Day and Father’s Day, while yes they can be over commercialized, are actually important. Being a parent can at times wear you down and make you wonder if all you do for your kids is appreciated. Taking the time out of our year to dedicate telling our mum’s and dad’s how much we love them and how we appreciate all that they do makes the hardest job in the world just that much more rewarding. I think these days get brushed off as a day young kids give their mum’s a home-made card and some flowers and then we grow up and we outgrow having to celebrate it. But I want to challenge you this year, for those of you that have grown up, moved on and maybe even had your own families, take special care this year to make sure your adult parents still know how much you love and appreciate them. It doesn’t have to be expensive; a day without having to cook, a lie in, a card or maybe a batch of these amazing Biscoff Swirled Chocolate Brownies. Just a little something to know how much they mean to you. I know my mom and mother-in-law mean even more to me now then I could have ever imagined.

Biscoff Swirled Chocolate Brownies
225g (1 c.) butter, melted
1 tsp vanilla extract
4 eggs
190g (1 1/2 c.) plain flour
1/2 tsp baking powder
1/2 tsp salt
30g (1/4 c.) cocoa powder
65g (1/4 c.) biscoff spread

Mix sugar, butter and vanilla together. Carefully mix in the eggs and then fold in the flour, baking powder and salt. Mix well until all the ingredients are combined.

Separate the batter into two different bowls, you only want 1/4* in one bowl and 3/4 in the last. In the first bowl with the largest amount of batter add the cocoa powder. Mix until combined.

In the second bowl add the biscoff spread. Mix until well combined. *I set aside a bit too much batter for the biscoff which resulted in enough to cover the top of the brownies and then forgot to use my knife so my result was more layered rather then swirled. Although this doesn’t effect the taste, just more aesthetics.

In a rectangular rectangular 23x33cm (9in x 13in) greased tin add the batter that you added the cocoa powder to. Make sure the batter is covering the bottom of the pan.

Next you want to swirl in the biscoff batter. Personally I like to add the batter into a icing bag or a plastic bag with the end cut off and swirl it in using that. Then take a butter knife and cut the spread into the batter. This is the step I personally forgot to do.
- 400g (2 c.) caster sugar
- 225g (1 c.) butter, melted

- 225g (1¾ c.) plain flour
- ½ tsp baking powder
- ½ tsp salt
- 30g (1/4 c.) cocoa powder
- 65g (1/4 c.) biscoff spread
- Mix sugar, butter and vanilla together.
- Carefully mix in the eggs and then fold in the flour, baking powder and salt. Mix well until all the ingredients are combined.
- Separate the batter into two different bowls, you only want ¼ in one bowl and ¾ in the last. In the first bowl with the largest amount of batter add the cocoa powder. Mix until combined.
- In the second bowl add the biscoff spread. Mix until well combined.
- In a rectangular rectangular 23x33cm (9in x 13in) greased tin add the batter that you added the cocoa powder to. Make sure the batter is covering the bottom of the pan.

- Bake at 180 C (350 F) for 20 – 25 minutes.
- Cool, and slice into equal square portions.
