All Day Stew

Well this past weekend my husband and I have been trying to finalize the changes that are going to be happening with the blog. There is a huge redesign that will be happening and I am so excited about it, I will hopefully be releasing it later this week. Aligning with my vision of helping people keep their budget down with homecooked meals I am going to be talking a lot more about baby-led weaning and will be featuring more toddler/baby meals that are also tasty for the whole family. So exciting!

Until then I wanted to share with you a childhood favourite dish that everyone in my family loves. It is perfect for my daughter because the beef is so tender she can easily eat it. I love easy meals to throw in the crockpot, it makes evenings so much simpler. And these days with Morgan walking and getting into even more mischief it is needed more then ever. Sadly the crockpot died a tragic death so I had to adapt this recipe last minute. If you want an even simpler meal just throw all the ingredients into a crockpot and cook on low all day.

All Day Stew

1 medium onion, chopped
2 garlic cloves, minced
200g (7 oz) green beans
500g (17 oz) new potato
500g (1 lb) beef, stew meat
400g tin of cream of mushroom soup

Brown the beef with the onions and garlic in a large pot.

Add the green beans, new potatoes and soup in with the beef. If you don’t have new potatoes or they are rather large slice them in half.

Cook on low heat for at least 6 hours, this stew gets better with time so the longer you can cook it the better.

Serve with bread or over rice.
